1 serving = 3½ Wahls veg/fruit cups
3 cups chopped kale leaves
2 tablespoons Wahls Italian Dressing
3 to 4 ounces cooked duck, sliced
½ cup grated raw beet
1 tablespoon raw walnuts
1 tablespoon Soft Cheez
TO MAKE: Wilt the kale by steaming for 2 minutes, or massaging vigorously with a tablespoon of apple cider vinegar or citrus juice and letting it sit for about 30 minutes to an hour, to tenderize (both steaming and massaging with acid reduce the natural bitterness in kale).
Put the wilted kale on a plate. Drizzle with the dressing, and toss to coat. Top with the duck. Arrange the beets, walnuts, and Soft Cheez (in dabs) over the top.
